Easy Mexican Rice Recipe

This straightforward Mexican rice recipe combines onion powder, garlic powder and tomato sauce to make an easy side dish. For added colour and flavour, stir green pepper, red pepper or fresh tomato into the rice before it simmers, adjusting it to suit your family’s preferences. Swap the water for chicken stock if you would like a richer, more savoury result.

Ingredients

  • 60 ml rapeseed oil
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 200 g uncooked white rice
  • 360 ml water
  • 1 (185 g) tin tomato sauce

Directions

  1. Warm the rapeseed oil in a frying pan over a medium-high heat, then add the onion powder and garlic powder. Mix in the rice and cook for 2 to 4 minutes, until golden.
  2. Pour in the water and tomato sauce, then bring the mixture to the boil. Turn the heat down to medium-low, cover and simmer for about 15 minutes, or until the rice is tender.
